Woo-hoo! Works for Me Wednesday this week is the Kitchen Edition!
My first issue of Cooking Light arrived this week. In it, I found two new vegetables recipes, and I tried both on my family right away. Thought no one but me is a fan of the cole family of vegetables (which includes kale, cauliflower, broccoli, cabbage, brussel sprouts, and other good stuff), these two recipes got my family to finish up a whole head of cauliflower and two whole heads of broccoli within twenty-four hours of my cooking them up. My guess is there are other folks out there who'd like to get their families more interested in cruciferous vegetables too, so I'm passing on the links.
These two recipes:
Broccoli with Red Pepper and Toasted Garlic
and
Roasted Cauliflower with Brown Butter
work for me! (They might not work so well for you if your family is anti-spicy along with being anti-cole. But if you're a pepper-loving bunch, I don't think the kick in these recipes will turn you off.)
Also? Extraordinarily simple, and no cheese sauce involved. :D

Another cole veggie tip - my husband loves Brussels Sprouts (I can't STAND them) but I finally found a way to cook them that even I like!
Saute onion and some bacon in a little olive oil, add brussels sprouts (cut the big ones in half), cover and cook until tender.
Bacon makes everything better!
We also make our cauliflower mashed with fat free cream cheese - like mashed potatoes. It's the only way my littlies will eat them!

I never knew they were called 'cole' vegetables, but now I get where cole slaw comes from. I'm a weirdo--I actually like them all, including brussels sprouts (but only if roasted). These recipes look really good. Thanks!
What? No cheese sauce??? Just kidding. The recipes sound great. Though, I doubt munchkin would care for them. I'm lucky as my group loves all kinds of veggies.
I'll have to try that broccoli recipe, that looks great. We usually have roasted broccoli around here. I started doing that last fall or so after reading an article about roasting veggies in Fine Cooking (my favorite cooking magazine). Now we eat a lot of veggies that way - it is really tasty! Granted, you're adding fat to the vegetables, but that really isn't an issue in my family.
